Pumpkin Cream Cheese Muffins

Here is my absolute favorite muffin recipe…..Pumpkin Cream Cheese Muffins.  So many friends have requested this one, I figured I should definitely post it!  I took a bunch of copy-cat recipes for the Starbucks version of this muffin, smooshed them together to create a version that I liked and have been making them ever since.  They really are AMAZING!

Yummy, crunchy pumpkin seeds on top!

They are sooo moist!

3 cups whole wheat flour  (soft or hard white is fine)
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground cloves
4 tsp pumpkin pie spice
pinch of cardamom (optional)
1 tsp salt
1 tsp baking soda
4 eggs
2 cups unrefined sugar
2 cups cooked pumpkin  (you can use canned, pure pumpkin as well)
1 1/4 cups olive oil
8 oz package of cream cheese
Roasted Pumpkin Seeds*

Make your cream cheese filling first.  Mix cream cheese with 1 tsp of vanilla and several tablespoons of powdered sugar (to your taste!) on high until everything is well mixed.  Spread the mixture across the middle of a piece of aluminum foil and bring up the sides, forming it into a “log” of sorts.  Put it into the freezer (30-45 minutes usually does it) to solidify it and make it easier to cut and work with later.

Preheat oven to 350.  Mix together remaining ingredients (except pumpkin seeds).  Fill greased muffin pans about half full.  Take out cream cheese log, take the foil off and cut it into 24 little discs.   Place one disc in the middle of each muffin and press down lightly  .   Top each muffin with the roasted pumpkin seeds (or other nuts of your choice).  Bake at 350 for 20-25 minutes, until a toothpick comes out clean when testing the muffin portion.  Be careful, the cream cheese will be hot!  Let cool in the pan for 5-10 minutes, then finish cooling on racks.  Makes 24 moist, delicious muffins!

*I roast my pumpkin seeds on a cookie sheet with a little olive oil and lots of cinnamon and sugar at 325 for about 30 min, stirring every 5 minutes or so.
